  • 3 ¾ cups (450g) all-purpose flour
  • 1 packet (2 ¼ tsp) instant yeast
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 ¼ cups (300ml) warm water
  • 2 tbsp unsalted butter, melted
  • 1 lb (450g) ground beef
  • 1 small onion, finely diced
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup (100g) shredded cheddar cheese
  • 4 cups (1L) water
  • ¼ cup (60g) baking soda
  • 1 large egg, beaten
  • Coarse salt
  • 2 tbsp unsalted butter, melted

Instructions

  1. In a large mixing bowl, combine the flour, yeast, salt, and sugar. Gradually add the warm water and melted butter. Mix until a dough forms, then knead for 8-10 minutes until smooth and elastic.
  2. Cover the dough with a clean towel and let it rise in a warm spot for 30 minutes or until doubled in size.
  3. While the dough rises, cook the ground beef and diced onion in a skillet over medium heat. Season with garlic powder, salt, and pepper. Once cooked, drain any excess grease and stir in the shredded cheddar. Let it cool slightly.
  4. Preheat your oven to 425°F (220°C). Divide the dough into 12 equal pieces. Roll each piece into a circle, about 4 inches in diameter. Place a spoonful of the filling in the center, then pinch the edges together to seal.
  5. In a large pot, bring 4 cups of water to a boil. Stir in the baking soda. Carefully drop each dough ball into the water for 20-30 seconds, then transfer to a parchment-lined baking sheet.
  6. Brush each dough ball with the beaten egg and sprinkle with coarse salt. Bake for 12-15 minutes or until golden brown.
  7. Brush the warm pretzel bombs with melted butter for that classic pretzel shine. Let cool slightly before serving.

Notes

Don’t skip the baking soda bath—it’s what gives the pretzels their signature flavor and chewy texture. Be mindful of how much filling you use to prevent it from spilling out during baking.
