  • 67 medium Yukon Gold or Russet potatoes (about 2.5 lbs), peeled and diced
  • 14 oz smoked kielbasa sausage, sliced into 1/2-inch rounds
  • 2 cups shredded sharp cheddar cheese, divided
  • 4 oz cream cheese, softened and cubed
  • 1 cup whole milk or half-and-half
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp butter
  • 1 tsp paprika
  • Salt & black pepper, to taste (start with 1/2 tsp each)
  • Fresh chives or parsley, for garnish (optional)

Instructions

  1. Peel (or scrub) and dice the potatoes into 1/2-inch cubes. If prepping ahead, keep potatoes in cold water to prevent browning.
  2. Heat butter in a large skillet over medium-high heat. Add sliced kielbasa and cook for 2-3 minutes until lightly browned. Add diced onions and cook for another 2-3 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add diced potatoes to the bottom of the crockpot. Top with sautéed kielbasa, onions, and garlic. Sprinkle paprika, salt, and black pepper over everything.
  4. Sprinkle 1 1/2 cups of shredded cheddar cheese evenly over the sausage and potatoes. Dot with cubed cream cheese.
  5. Pour in the milk or half-and-half evenly over the mixture.
  6. Gently stir all ingredients in the crockpot to combine, but do not overmix. Cover with the lid.
  7. Cook on LOW for 5-6 hours or HIGH for 3-4 hours, until potatoes are fork-tender and cheese is melted and bubbly.
  8. About 20 minutes before serving, sprinkle the remaining 1/2 cup of cheddar cheese over the top and re-cover to melt.
  9. Test a potato cube for doneness and adjust salt and pepper as needed.
  10. Serve hot, garnished with chopped chives or parsley if desired.

Notes

For best flavor, sauté the kielbasa and onions before adding to the crockpot. Dice potatoes evenly for consistent cooking. Adjust salt at the end, as cheese and sausage can be salty. Add extra veggies like broccoli or bell peppers in the last hour for variety. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.
