  • 1 cup (170g) semi-sweet chocolate chips
  • 1/2 cup (100g) mini rainbow chocolate chips
  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1 1/4 cups (156g) all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Blue gel food coloring (start with 1/4 tsp, add more as needed)
  • 1/2 cup (85g) mini chocolate chips
  • 1/3 cup (55g) mini chocolate sandwich cookies, chopped (like Oreos)
  • 1/4 cup (40g) rainbow candy-coated chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Make the Brownie Cookie Dough: In a large bowl, cream together 1 cup butter, 1 1/4 cups granulated sugar, and 1/2 cup brown sugar until light and fluffy (2-3 minutes).
  3. Beat in 2 eggs, one at a time, then add 1 1/2 tsp vanilla extract. Scrape the bowl as needed.
  4. In a separate bowl, whisk together 2 cups flour, 3/4 cup cocoa powder, 1 tsp baking soda, and 1/2 tsp salt.
  5. Add dry ingredients to the wet mixture in two batches, mixing just until combined. Do not overmix.
  6. Fold in 1 cup chocolate chips and 1/2 cup rainbow chips. If dough is dry, add 1-2 tbsp milk; if sticky, chill for 10 minutes.
  7. Prepare the Cookie Monster Dough: In a separate bowl, beat 1/2 cup butter with 1/2 cup granulated sugar and 1/4 cup brown sugar until creamy.
  8. Mix in 1 egg and 1/2 tsp vanilla extract.
  9. Add blue gel food coloring (start with 1/4 tsp, add more as desired) and mix until evenly colored.
  10. In another bowl, whisk 1 1/4 cups flour, 1/2 tsp baking soda, and 1/4 tsp salt.
  11. Gradually mix dry ingredients into the wet mixture until just combined.
  12. Stir in 1/2 cup mini chocolate chips, 1/3 cup chopped mini chocolate sandwich cookies, and 1/4 cup rainbow candy chips. Chill if sticky.
  13. Marble the Doughs: Pinch off some brownie dough and some cookie monster dough, press together, and gently swirl to create a chunky marble effect.
  14. Scoop or roll into balls (about 3 tbsp each) and place 2 inches apart on lined sheets.
  15. Bake for 11-13 minutes, until edges are set but centers look slightly underdone. Rotate pans halfway through baking.
  16. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  17. While still warm, press extra rainbow chips or mini cookies on top for decoration (optional).
