  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cups low-sodium chicken broth
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • 12 oz pasta (penne, rotini, or rigatoni)
  • 1/21 cup milk or half-and-half
  • Optional: 2 cups chopped baby spinach
  • Optional: 1/2 cup sun-dried tomatoes, sliced
  • Optional: Red pepper flakes, to taste

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker and pour in the chicken broth.
  2. Sprinkle Italian seasoning, garlic powder, onion powder, salt, and black pepper over the chicken. Add the cream cheese in chunks.
  3. Cover and cook on low for 5–6 hours or high for 2.5–3 hours, until the chicken is very tender.
  4. Remove the chicken and shred with two forks, then return it to the slow cooker and stir to combine.
  5. Add shredded mozzarella and grated Parmesan. Stir until the cheese melts and the sauce is thick and creamy.
  6. While the chicken cooks, boil the pasta in salted water until just al dente (1–2 minutes less than package instructions). Drain well.
  7. Stir the cooked pasta into the creamy chicken mixture. Add 1/2–1 cup milk or half-and-half, stirring until the sauce is your desired consistency.
  8. If using spinach, sun-dried tomatoes, or red pepper flakes, stir them in now. Cover and let sit on ‘warm’ for 10–15 minutes until heated through and greens are wilted.
  9. Taste and adjust salt and pepper as needed. Serve hot, topped with extra Parmesan and fresh herbs if desired.

Notes

For a gluten-free version, use gluten-free pasta. For a lighter dish, use low-fat cream cheese and whole wheat pasta. Add veggies like spinach or sun-dried tomatoes for extra flavor. If reheating, add a splash of milk or broth to loosen the sauce. Pasta can be cooked directly in the slow cooker by adding uncooked pasta and extra broth during the last 30–40 minutes of cooking.
