Creamy Crockpot Pork Chops

These creamy crockpot pork chops are fork-tender and smothered in a luscious, savory sauce. This easy, comforting dinner is perfect for busy weeknights and is sure to please the whole family.

  • 46 pork chops (bone-in or boneless, about 2 lbs)
  • 1 packet onion soup mix (about 1 oz)
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup chicken broth (low sodium preferred)
  • 4 oz cream cheese, softened and cubed
  • 2 cloves garlic, minced (or 1/2 tsp garlic powder)
  • 1/2 tsp black pepper (plus more to taste)
  • 1/2 tsp dried thyme or 1 tsp fresh thyme (optional)
  • 1 tbsp olive oil or butter (for searing, optional)
  • 1 cup sliced mushrooms (optional)
  • 1 small onion, sliced (optional)
  • 2 cups fresh spinach (optional, stir in at end)

Instructions

  1. Pat pork chops dry with paper towels. Season lightly with black pepper and thyme. Let sit at room temperature for 15 minutes if possible.
  2. Optional: Heat olive oil or butter in a large skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown. Work in batches if needed.
  3. Place seared pork chops in the slow cooker. If using, scatter sliced mushrooms and/or onion on top.
  4. In a bowl, whisk together cream of mushroom soup, onion soup mix, chicken broth, minced garlic, and a bit more black pepper. Pour over pork chops.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until pork is fork-tender and sauce is bubbly.
  6. Cut cream cheese into cubes and stir into the sauce. Cover and cook for another 15-20 minutes, or until melted and smooth. Stir gently to combine.
  7. Taste and adjust seasoning. If using spinach, stir in until wilted.
  8. Carefully remove pork chops and spoon creamy sauce over the top. Serve hot over mashed potatoes, rice, or egg noodles.

Notes

For best results, use thick, bone-in pork chops and sear them before slow cooking. Add cream cheese at the end for a silky sauce. Adjust sauce consistency with broth or by cooking uncovered. For gluten-free or dairy-free, use appropriate soup and cream cheese substitutes. Leftovers keep well and flavors deepen overnight.
