Instructions

  1. Pat pork chops dry with paper towels and season both sides generously with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 2-3 minutes per side until golden brown. Work in batches if needed.
  3. Transfer browned pork chops to the slow cooker in an even layer.
  4. In a medium bowl, whisk together chicken broth, heavy cream, softened cream cheese, Parmesan cheese, minced garlic, Italian seasoning, paprika, and crushed red pepper flakes (if using) until as smooth as possible.
  5. Pour the sauce mixture over the pork chops in the slow cooker, spreading evenly to cover.
  6. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until pork is tender and reaches an internal temperature of at least 145°F.
  7. Gently remove pork chops to a serving platter. Whisk the sauce in the slow cooker to smooth out any lumps.
