Decadent Roasted Cherry Brownies

Fudgy, ultra-chocolaty brownies with pockets of juicy roasted cherries in every bite. A rich and indulgent dessert perfect for any occasion.

  • 2 cups fresh cherries, pitted and halved
  • 1 tablespoon granulated sugar (for roasting cherries)
  • 1 cup granulated sugar (for brownie batter)
  • 1/2 cup unsalted butter, softened
  • 6 ounces dark chocolate, chopped or high-quality chocolate chips
  • 1/4 cup cocoa powder, unsweetened
  • 3/4 cup all-purpose flour
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet and an 8×8-inch baking dish with parchment paper.
  2. Spread the pitted and halved cherries on the baking sheet. Sprinkle with 1 tablespoon of sugar and roast for 15 minutes, stirring halfway through. Set aside to cool.
  3. In a microwave-safe bowl, melt the butter and dark chocolate together in 30-second intervals, stirring in between until smooth. Let cool slightly.
  4. In a large mixing bowl, whisk the eggs, 1 cup of sugar, and vanilla extract until light and frothy.
  5. Slowly whisk the melted chocolate mixture into the egg mixture.
  6. In a separate bowl, sift together the cocoa powder, flour, and salt. Fold the dry ingredients into the wet ingredients until just combined.
  7. Pour half the brownie batter into the prepared baking dish. Scatter half of the roasted cherries over the batter. Add the remaining batter and top with the rest of the cherries, pressing them in slightly.
  8. Lower the oven temperature to 350°F (175°C) and bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. Let the brownies cool completely in the pan before slicing. For clean slices, chill them in the fridge for 20 minutes before cutting.

Notes

For an extra touch, sprinkle flaky sea salt on top before serving. Use high-quality chocolate for the best flavor, and avoid overmixing the batter to keep the brownies fudgy.
