These Frankenstein Rice Crispy Treats are a quick, easy, and festive Halloween dessert that combines classic marshmallow-butter flavor with playful monster decorations. Perfect for parties, bake sales, or spooky movie nights, they’re a fun activity for kids and adults alike.

Ingredients

Scale
  • 6 cups crispy rice cereal (like Rice Krispies)
  • 1/4 cup unsalted butter (plus extra for greasing the pan)
  • 10 oz mini marshmallows (about 5 1/2 cups)
  • 1/2 teaspoon pure vanilla extract
  • Green gel food coloring
  • Pinch of salt
  • Dark chocolate melts or chocolate chips (for hair and bolts)
  • Candy eyeballs
  • Black decorating gel or food-safe marker (for mouths and scars)
  • Mini marshmallows or pretzel sticks (optional, for neck bolts)
  • Sprinkles or colored candies (optional, for decoration)

Instructions

  1. Grease a 9×13-inch baking pan with butter or line with parchment paper.
  2. In a large saucepan over low heat, melt 1/4 cup unsalted butter until fully melted but not browned, about 2 minutes.
  3. Add 10 oz mini marshmallows and stir constantly until smooth and gooey, about 3-4 minutes.
  4. Remove from heat. Stir in 1/2 teaspoon vanilla extract, a pinch of salt, and green gel food coloring (start with 1/4 teaspoon and add more as needed for a vibrant green).
  5. Quickly fold in 6 cups crispy rice cereal until evenly coated.
  6. Press the mixture into the prepared pan in an even layer. For cleaner edges, lay parchment on top and press down with another pan or the bottom of a measuring cup.
  7. Let the treats cool for at least 30 minutes (or refrigerate for 10 minutes).
  8. Remove treats from the pan and cut into rectangles about 2×3 inches.
  9. Melt dark chocolate in a microwave-safe bowl in 20-second bursts, stirring between each.
  10. Spoon or pipe chocolate ‘hair’ on top of each rectangle. While chocolate is wet, stick on candy eyes and press mini marshmallows or pretzels into the sides for bolts.
  11. Use black decorating gel or edible marker to draw mouths, stitches, and scars. Add extra candies or sprinkles for unique expressions.
  12. Let decorated treats sit until chocolate is firm (about 10-15 minutes at room temperature). Serve and enjoy!

Notes

For allergy-friendly treats, use gluten-free cereal and vegan marshmallows. Gel food coloring gives the brightest green. Decorate with whatever candies you have on hand—imperfections add character! Chill before slicing for cleaner cuts. Store in an airtight container for up to 3 days.
