  • 2 large yellow onions, thinly sliced
  • 2 tablespoons unsalted butter (plus 2 tablespoons melted for buns)
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt (plus 1 teaspoon for beef)
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme (optional)
  • 1/4 cup beef broth
  • 1 teaspoon balsamic vinegar (optional)
  • 1 1/2 pounds ground beef (80/20 preferred)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 8 ounces Gruyère or Swiss cheese, sliced or shredded
  • 12 brioche slider buns
  • 1 tablespoon sesame seeds or poppy seeds (optional, for topping)

Instructions

  1. Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium-low heat.
  2. Add sliced onions and sprinkle with 1/2 teaspoon salt. Cook, stirring every 5 minutes, until onions are deep golden brown, about 25–30 minutes. If onions start to stick, add a splash of beef broth.
  3. Stir in thyme and remaining beef broth. Simmer until most of the liquid is gone (about 2 minutes). Add balsamic vinegar if using and cook another minute.
  4. While onions cook, combine ground beef, Worcestershire sauce, 1 teaspoon salt, black pepper, and garlic powder in a bowl. Mix gently.
  5. Divide beef into 12 portions (about 2 ounces each). Shape into patties slightly wider than the buns.
  6. Heat skillet over medium-high. Cook patties in batches, 2–3 minutes per side, until browned. Set aside.
  7. Preheat oven to 350°F (175°C). Line a baking sheet with foil or parchment.
  8. Slice brioche slider buns in half horizontally. Place bottom buns on baking sheet. Arrange cooked patties on buns.
  9. Top each patty with caramelized onions and cheese. Place top buns over cheese.
  10. Brush tops with melted butter and sprinkle with sesame or poppy seeds if using.
  11. Cover sliders loosely with foil and bake for 8 minutes, until cheese melts.
  12. Remove foil and bake another 3–4 minutes, until tops are golden.
  13. Let rest 2 minutes before slicing into individual sliders. Serve hot.

Notes

For best flavor, caramelize onions low and slow. Toasting the buns prevents sogginess. You can make the onions and patties ahead of time. For gluten-free, use gluten-free slider buns. For vegetarian, use plant-based ground and vegan cheese. If freezing, assemble but do not bake; thaw before baking as directed.
