  • Optional: 1-2 tablespoons chia seeds or flaxseed meal
  • Optional: Unsweetened shredded coconut
  • Optional: Pinch of sea salt (if peanut butter is unsalted)

Instructions

  1. Add Greek yogurt and peanut butter to a large mixing bowl. Stir with a sturdy spoon or spatula until smooth and fully combined. If peanut butter is thick, microwave it for 15-20 seconds to soften.
  2. Pour in honey or maple syrup and vanilla extract. Mix well. Taste and add more sweetener if desired.
  3. Gently fold in mini chocolate chips and any optional add-ins (chia seeds, coconut, or salt).
  4. Line a baking sheet or plate with parchment or wax paper. Use a 1-tablespoon cookie scoop or two spoons to drop rounded mounds of the mixture onto the sheet (about 24-28 bites). If mixture is runny, chill in the fridge for 10 minutes before scooping.
  5. Freeze the tray flat for at least 2 hours, or until the bites are solid.
  6. Once frozen, transfer bites to a freezer-safe container or zip-top bag. Store in the freezer until ready to eat (up to 2 months).
