  • 1.52 pounds sirloin steak, cut into 1-inch pieces (or stew meat or sirloin tips)
  • 1.5 pounds baby potatoes, halved or quartered (red or Yukon gold preferred)
  • 3 tablespoons unsalted butter, divided
  • 6 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt (preferably kosher salt)
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme (or Italian seasoning)
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup beef broth (low-sodium if desired)
  • Fresh parsley, chopped (optional, for serving)
  • Extra melted butter or pan juices (optional, for serving)
  • Grated Parmesan (optional, for serving)

Instructions

  1. Pat steak bites dry with paper towels. Cut potatoes into even 1-inch chunks. Season steak with salt, pepper, smoked paprika, and dried thyme.
  2. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Working in batches, sear steak bites for 1–2 minutes per side until browned but not cooked through. Transfer seared steak to the slow cooker.
  3. Add cut potatoes to the slow cooker, nestling them around and beneath the steak bites. Sprinkle in minced garlic and pour Worcestershire sauce and beef broth evenly over the top.
  4. Dot the remaining butter over the steak and potatoes. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are fork-tender and steak is juicy. Stir once halfway through if possible.
  5. Gently toss everything to coat in the garlic butter sauce. Taste and adjust seasoning if needed. Garnish with fresh parsley, extra melted butter, or Parmesan if desired. Serve hot.

For best flavor, sear the steak bites before adding to the slow cooker. Use waxy potatoes like red or Yukon gold for best texture. To make dairy-free, substitute plant-based butter or olive oil. For a low-carb version, swap potatoes for cauliflower florets. Add mushrooms or carrots for extra veggies. Leftovers keep well and taste even better the next day.
