These blueberry oatmeal bars are fruity, sweet, and incredibly easy to make. Perfect for a quick dessert or a grab-and-go treat, they’re sure to become your new favorite.

  • 1 ½ cups (140g) old-fashioned rolled oats
  • 1 cup (120g) all-purpose flour
  • ½ cup (100g) brown sugar
  • ½ teaspoon ground cinnamon
  • ½ cup (115g) unsalted butter, melted
  • 2 cups (300g) blueberries
  • ¼ cup (50g) granulated sugar
  • 1 tablespoon (8g) cornstarch
  • 1 tablespoon (15ml) lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch baking dish with parchment paper.
  2. In a mixing bowl, combine rolled oats, all-purpose flour, brown sugar, and cinnamon. Pour in melted butter and mix until crumbly.
  3. In another bowl, mix blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract to prepare the blueberry filling.
  4. Press half of the oat mixture into the bottom of the prepared baking dish to form a crust.
  5. Spread the blueberry filling evenly on top, then sprinkle the remaining oat mixture over the blueberries.
  6. Bake for 35-40 minutes, or until the topping is golden brown and the blueberries are bubbling.
  7. Let the bars cool completely in the dish before slicing and serving.

Notes

For a firmer oat topping, use chilled butter instead of melted butter and cut it into the dry mixture. Let the bars cool completely before slicing for clean cuts.
