This easy slow cooker recipe features tender beef bites and baby potatoes coated in a sweet and savory honey garlic butter sauce. It’s a comforting, family-friendly dinner that requires minimal prep and delivers big flavor with every bite.

  • 2 pounds beef stew meat, cut into bite-sized cubes (chuck roast or round recommended)
  • 1.5 pounds baby potatoes, halved or quartered if large (Yukon Gold or red potatoes)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • Salt & pepper to taste
  • 1/3 cup honey
  • 1/4 cup unsalted butter, melted
  • 1/4 cup low-sodium soy sauce (or coconut aminos for gluten-free)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves (optional)
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish, optional)
  • Extra honey drizzle (for garnish, optional)

Instructions

  1. Cut beef into bite-sized pieces, trimming excess fat but leaving some for flavor.
  2. Wash and halve the baby potatoes. If using larger potatoes, quarter them.
  3. Dice the onion and mince the garlic. Set aside.
  4. In a medium mixing bowl, whisk together honey, melted butter, soy sauce, Worcestershire sauce, minced garlic, thyme, paprika, and red pepper flakes (if using). Taste and adjust seasoning as desired.
  5. Add potatoes and onions to the bottom of the slow cooker. Sprinkle lightly with salt and pepper.
  6. Top with beef bites, spreading them out evenly.
  7. Pour the honey garlic butter sauce over everything, ensuring beef and potatoes are well-coated. Gently toss with tongs if needed.
  8. Cover and cook on LOW for 6-7 hours or HIGH for 3.5-4 hours, until beef is fork-tender and potatoes are soft.
  9. Halfway through, gently stir to redistribute the sauce. If potatoes are done before beef, scoop them out and keep warm.
  10. If sauce is too runny at the end, remove lid and cook on HIGH for 15-20 minutes more, or stir in a teaspoon of cornstarch dissolved in cold water.
  11. Taste and adjust seasoning. Add more salt, pepper, or honey as needed.
  12. Serve beef bites and potatoes hot, garnished with chopped fresh parsley and a drizzle of sauce. Optionally, add an extra drizzle of honey.

Notes

For extra flavor, brown the beef cubes in a skillet before adding to the slow cooker. To thicken the sauce, use a cornstarch slurry at the end of cooking. You can swap potatoes for carrots, sweet potatoes, or cauliflower for a low-carb version. Store leftovers in the fridge for up to 4 days or freeze for up to 2 months. Garnish with fresh parsley and serve with crusty bread to soak up the sauce.
