  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 4 oz (115g) cream cheese, softened
  • 3/4 cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (150g) fresh strawberries, diced
  • Optional: powdered sugar for dusting or white chocolate for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a larger bowl, beat the butter and cream cheese until smooth and creamy, about 2-3 minutes.
  4. Gradually add the sugar and beat until fluffy. Mix in the egg and vanilla extract until fully combined.
  5. Slowly add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  6. Gently fold in the diced strawberries using a silicone spatula.
  7. Scoop out tablespoon-sized portions of dough and place them onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are lightly golden. The centers should still look slightly soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
  10. Optional: Dust with powdered sugar or drizzle with melted white chocolate for garnish.

Notes

For best results, use fresh strawberries and pat them dry to avoid excess moisture. If the dough feels sticky, chill it for 30 minutes before scooping. Watch the bake time closely to avoid overbaking.
