  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 teaspoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Use an electric mixer for best results.
  4. Add the egg and vanilla extract to the butter mixture and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix!
  6. Gently fold in the fresh blueberries and lemon zest using a spatula. Try not to crush the blueberries.
  7. Using a tablespoon or cookie scoop, drop the dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  8. Bake for 12-14 minutes, or until the edges are lightly golden. The centers may look slightly underdone, but they’ll firm up as they cool.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a cooling rack.

Notes

Toss blueberries in a bit of flour to prevent them from sinking. Chill the dough for 15-20 minutes if it feels sticky.
