  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups breadcrumbs (panko preferred)
  • Vegetable oil for frying

Instructions

  1. In a mixing bowl, combine the mashed potatoes, shredded cheddar cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until well incorporated.
  2. Using a small scoop or spoon, roll the potato mixture into balls about 1.5 inches in diameter. Set aside.
  3. Set up a coating station with three shallow bowls: flour in the first, beaten eggs in the second, and breadcrumbs in the third.
  4. Roll each potato ball in the flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Ensure each ball is fully coated.
  5. Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C). Test the oil with a small breadcrumb—it should sizzle immediately.
  6. Fry the potato balls in small batches for 2-3 minutes or until golden brown and crispy.
  7. Remove the balls with a slotted spoon and place them on paper towels to drain excess oil.
  8. Serve hot with your favorite dipping sauce, such as marinara, ranch, or sriracha mayo.

Notes

For make-ahead convenience, freeze the coated (but unfried) potato balls on a baking sheet, then transfer to a zip-top bag. Fry directly from frozen, adding an extra minute to the cooking time.
