  • 2/3 cup (140g) unsalted butter, melted
  • 1/4 cup (25g) unsweetened cocoa powder
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1/2 cup (120ml) heavy cream
  • Rainbow candy sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, whisking until combined. Stir in the cocoa powder until fully incorporated.
  3. In a separate bowl, mix the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  4. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.
  5. In a microwave-safe bowl, combine the chocolate chips and heavy cream. Microwave in 20-second intervals, stirring after each, until the mixture is smooth and glossy.
  6. Pour the ganache over the cooled brownies and spread it evenly with an offset spatula.
  7. Sprinkle the rainbow candy on top while the ganache is still wet. Refrigerate for at least 1 hour to set.
  8. Once the ganache is firm, lift the brownies out of the pan using the parchment overhang. Slice into squares and enjoy!
