  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows
  • 1 cup chocolate chips or chunks (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy—about 2-3 minutes.
  3. Mix in the eggs one at a time, followed by the vanilla extract. Scrape down the sides of the bowl as needed.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  6. If using, stir in the chocolate chips or chunks for extra chocolatey goodness.
  7. Scoop about 1 ½ tablespoons of dough, flatten slightly, and place a mini marshmallow in the center. Roll the dough around the marshmallow to seal it completely.
  8. Place the cookies on the prepared baking sheets, leaving about 2 inches between each. Bake for 9-12 minutes, or until the edges are set and the tops look slightly cracked.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack.

Notes

Make sure to fully seal the marshmallow inside the dough to prevent it from oozing out during baking. Chill the dough for 15-20 minutes if it feels sticky.
