  • 2 teaspoons baking powder

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar

  • 2 teaspoons pure vanilla extract
  • For Cinnamon Sugar Coating:
  • 1/4 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Pour 1 1/2 cups apple cider into a medium saucepan. Simmer over medium heat, stirring occasionally, until reduced to about 3/4 cup (15-20 minutes). Cool to room temperature.
  2. Grease a 10-12 cup Bundt pan generously with butter, then dust with flour. Tap out excess.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In a large bowl, beat softened butter, granulated sugar, and brown sugar on medium speed until light and fluffy (3-4 minutes).
  5. Beat in eggs one at a time, mixing well after each. Add vanilla extract and mix.
  6. Mix in sour cream (or Greek yogurt) until smooth.
  7. With mixer on low, add flour mixture in three additions, alternating with the cooled reduced apple cider. Begin and end with flour. Mix just until combined.
  8. Spoon batter evenly into prepared Bundt pan. Smooth the top with a spatula and gently tap the pan to release air bubbles.
  9. Bake at 350°F for 35-45 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Let cake cool in the pan for 15-20 minutes. Loosen edges with a spatula, then invert onto a cooling rack. Cool completely.
  11. Brush the entire cake with melted butter. Mix granulated sugar and cinnamon, then sprinkle generously over the cake, pressing lightly so it sticks.
  12. Slice and serve while slightly warm for best texture.
