Ingredients

Scale
  • 2 cups (240g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup (113g) unsalted butter, melted and cooled
  • 1/2 cup (100g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup (120g) plain Greek yogurt
  • 2 teaspoons pure vanilla extract
  • 2 medium apples (about 1 1/2 cups / 180g), peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar (for topping)
  • 1/2 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
  2. Peel, core, and dice 2 medium apples (about 1 1/2 cups). Toss diced apples with 1 tablespoon lemon juice.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg (if using).
  4. In a medium bowl, whisk together melted butter, brown sugar, granulated sugar, eggs, Greek yogurt, and vanilla extract.
  5. Pour wet ingredients into dry ingredients. Gently fold with a spatula until just combined; do not overmix.
  6. Fold in diced apples (and nuts if using). Batter will be thick.
  7. Divide batter evenly among muffin cups, filling each about 3/4 full.
  8. Mix 2 tablespoons granulated sugar with 1/2 teaspoon cinnamon and sprinkle over each muffin.
  9. Bake for 18-22 minutes, until tops are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Serve warm if desired.

Notes

For extra moist muffins, grate half an apple and dice the rest. Don’t overmix the batter to keep muffins tender. Use tart, firm apples like Granny Smith or Honeycrisp for best results. Muffins freeze well for up to 3 months. For a nutty twist, add 1/2 cup chopped walnuts or pecans.
