  • 4 oz cream cheese (softened)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tbsp olive oil
  • 1/2 tsp dried oregano
  • 1/4 tsp garlic powder
  • Pinch of salt and pepper
  • 1 cup cherry tomatoes (diced)
  • 1 clove garlic (minced)
  • 2 tbsp fresh basil (chopped)
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Pinch of salt
  • 1 baguette (sliced into rounds)
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease your baking dish with olive oil or cooking spray.
  2. In a mixing bowl, combine the softened goat cheese, cream cheese, Parmesan (if using), olive oil, oregano, garlic powder, salt, and pepper. Use a whisk or spatula to mix until smooth and creamy. Transfer the mixture to your prepared baking dish and spread it evenly.
  3. In another bowl, toss together the diced cherry tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, and a pinch of salt. Let it sit for a few minutes to allow the flavors to meld.
  4. Spoon the bruschetta topping evenly over the goat cheese mixture in the baking dish.
  5. Place the dish in the preheated oven and bake for 15–18 minutes, or until the goat cheese is bubbly and slightly golden around the edges.
  6. While the dip is baking, arrange the baguette slices on a baking sheet. Lightly brush with olive oil and toast them under the broiler for 1–2 minutes per side, or until golden and crispy. Watch closely to avoid burning!
  7. Remove the dip from the oven and let it cool for 5 minutes. Garnish with fresh parsley if desired. Serve warm with toasted baguette slices.
