  • 2 1/4 cups (280 g) all-purpose flour
  • 3/4 cup (170 g) unsalted butter, softened
  • 1/2 cup (100 g) brown sugar
  • 1/2 cup (100 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg

Instructions

  1. Pour 1 cup (240 ml) of apple cider into a medium saucepan. Heat over medium heat until it reduces down to about 1/4 cup (60 ml), stirring occasionally. This takes around 15-20 minutes. Let it cool completely.
  2. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together 2 1/4 cups (280 g) of all-purpose flour, 1/2 tsp baking soda, 1/2 tsp salt, 1 tsp cinnamon, and 1/2 tsp nutmeg. Set aside.
  4. In a large mixing bowl, beat 3/4 cup (170 g) softened butter, 1/2 cup (100 g) granulated sugar, and 1/2 cup (100 g) brown sugar until light and fluffy, about 2-3 minutes.
  5. Beat in 1 large egg and 1 tsp vanilla extract, followed by the cooled apple cider reduction.
  6. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  7. Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly undercooked, but they’ll set as they cool.
  9. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
