Crispy bacon-wrapped jalapeño popper bites with a creamy, cheesy filling that’s perfect for game day, parties, or any gathering. These bite-sized appetizers disappear fast and are surprisingly easy to make.

  • 1215 medium fresh jalapeños
  • 8 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled cooked bacon (optional but recommended)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1215 slices thin-cut bacon (each slice cut in half crosswise)
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line a baking sheet with foil and place a wire rack on top.
  2. Wash 12-15 medium jalapeños and pat them completely dry with paper towels. Cut each one in half lengthwise. Use a small spoon to scrape out the seeds and white membranes.
  3. In a small bowl, combine 8 ounces softened cream cheese, 1/2 cup shredded cheddar cheese, 1/4 cup crumbled cooked bacon (if using), 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon smoked paprika, and a pinch of salt and pepper. Mix until well combined and smooth.
  4. Using a small spoon or piping bag, fill each jalapeño half generously with the cream cheese mixture. Don’t overstuff—the filling should be level with the cut edge of the pepper.
  5. Cut 12-15 slices of thin-cut bacon in half crosswise. Take one half-slice and wrap it around each filled jalapeño half, starting at one end and slightly overlapping as you go. Place each wrapped popper seam-side down on the wire rack. If needed, secure with a toothpick.
  6. Bake for 20-25 minutes. At the 15-minute mark, check and rotate the pan if some poppers are browning faster. Continue baking until the bacon is golden brown and crispy, and the filling is hot and bubbly.
  7. Optional: For extra crispy bacon, switch the oven to broil for the last 1-2 minutes. Watch closely to prevent burning.
  8. Remove from the oven and let rest on the wire rack for 5 minutes before serving.
  9. Transfer to a serving platter. If desired, sprinkle with chopped fresh chives or parsley. Serve warm.

Notes

For milder poppers, remove all white membranes. For spicier, leave some in. Thin-cut bacon works best. Pre-baking the bacon slightly before wrapping ensures even crispiness. Can be assembled up to 24 hours in advance and baked just before serving. Freeze unbaked poppers for up to 3 months.
