  • 4 large eggs, room temperature
  • ½ cup unsalted butter, melted and slightly cooled

  • 2 tablespoons bourbon (optional)
  • ¼ teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips
  • 1 ½ cups pecan halves, roughly chopped
  • 1 unbaked 9-inch pie crust

Instructions

  1. Preheat your oven to 350°F (175°C). Place your pie crust in the pie dish and crimp the edges. Refrigerate while making the filling.
  2. Toast the pecans in a dry skillet over medium heat for 3-4 minutes until fragrant. Transfer to a plate to cool completely.
  3. Melt the butter and let it cool for about 5 minutes.
  4. In a large bowl, whisk together corn syrup, granulated sugar, brown sugar, eggs, melted butter, vanilla extract, bourbon (if using), and salt until smooth and glossy.
  5. Fold in the chocolate chips and cooled toasted pecans with a rubber spatula until evenly distributed.
  6. Pour the filling into the chilled pie crust. Place the pie on a baking sheet.
  7. Wrap strips of aluminum foil around the exposed crust edges to prevent burning.
  8. Bake for 50-60 minutes, until the edges are set and the center is slightly jiggly. A toothpick inserted 2 inches from the center should come out with moist crumbs.
  9. Cool completely on a cooling rack for at least 2 hours before slicing.
