  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour (260g)
  • 1/4 cup cornstarch (30g)
  • 1/4 teaspoon salt
  • Optional: 1/4 teaspoon almond extract
  • Optional: Colored sprinkles or coarse sugar for decorating

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat butter, granulated sugar, and powdered sugar until light and fluffy (2-3 minutes on medium speed).
  3. Add egg yolk and vanilla extract (plus almond extract if using). Beat until combined, scraping down the sides as needed.
  4. Sift flour, cornstarch, and salt together. Gradually add to butter mixture, mixing on low until just combined. Dough should be soft, not sticky.
  5. Transfer dough to a piping bag fitted with a large star tip. Twist the top closed.
  6. Pipe 2-inch swirls onto the prepared baking sheet, spacing about 2 inches apart.
  7. Decorate with sprinkles or coarse sugar if desired.
  8. Bake for 10-12 minutes, until edges are lightly golden and centers remain pale.
  9. Let cookies rest on the sheet for 2 minutes, then transfer to a cooling rack.

Notes

For gluten-free, use a 1:1 gluten-free baking blend. For dairy-free, substitute vegan butter. If dough is too stiff, add 1-2 teaspoons milk; if too soft, chill for 10 minutes.
