A comforting one-pan dish combining creamy, cheesy potatoes with hearty smoked sausage and tangy ranch seasoning. Perfect for family dinners or potlucks!

Ingredients

Scale
  • 1.5 lbs baby potatoes, halved or quartered
  • 12 oz smoked sausage, sliced into bite-sized pieces
  • 3 tbsp olive oil
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Fresh parsley, optional for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it with non-stick spray.
  2. Wash and dry the baby potatoes. Cut them into halves or quarters, depending on their size.
  3. In a large mixing bowl, toss the potatoes with 2 tablespoons of olive oil. Sprinkle in the ranch seasoning mix, and season with a pinch of salt and pepper. Mix well to coat all the potatoes evenly.
  4. Spread the seasoned potatoes onto the prepared baking sheet in a single layer. Reserve the mixing bowl for the sausage.
  5. Place the baking sheet in the oven and roast the potatoes for 20 minutes, tossing midway to ensure they cook evenly.
  6. While the potatoes are roasting, slice the smoked sausage into bite-sized pieces and toss them in the reserved mixing bowl with 1 tablespoon of olive oil.
  7. After 20 minutes, remove the potatoes from the oven. Add the seasoned sausage pieces to the baking sheet, arranging them around the potatoes.
  8. Return the baking sheet to the oven and bake for another 15-20 minutes, or until the potatoes are tender and golden, and the sausage is slightly caramelized.
  9. Sprinkle the shredded cheddar cheese evenly over the potatoes and sausage. Place the baking sheet back in the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  10. Garnish with freshly chopped parsley if desired. Serve immediately and enjoy!
