Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with cooking spray or butter.
  2. Peel and thinly slice the potatoes to about 1/8-inch thick using a mandoline or sharp knife.
  3. In a large saucepan over medium heat, melt 3 tablespoons of butter. Add 3 tablespoons of all-purpose flour and whisk for 1-2 minutes until smooth.
  4. Gradually pour in 2 cups of whole milk and 1 cup of heavy cream, whisking constantly to avoid lumps.
  5. Stir in 1 teaspoon of salt, 1/2 teaspoon of black pepper, and a pinch of nutmeg (if using). Add the minced garlic and cook for another 1-2 minutes.
  6. Reduce heat to low and stir in 2 cups of shredded cheddar cheese and 1/2 cup grated Parmesan cheese. Stir until the cheeses are melted and the sauce is smooth. Remove from heat.
  7. Layer half the sliced potatoes in the prepared baking dish. Sprinkle half of the sliced onions over the potatoes and pour half the cheese sauce evenly on top. Repeat with the remaining potatoes, onions, and cheese sauce.
  8. Cover the baking dish with aluminum foil and bake for 45 minutes. Then remove the foil and bake for an additional 25-30 minutes, or until the top is golden and bubbly.
  9. Let the dish sit for about 10 minutes after baking to allow the sauce to thicken before serving.
