  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2½ cups (310g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ¼ cup (60ml) water
  • ½ cup (120ml) heavy cream
  • 3 tablespoons (42g) unsalted butter
  • ½ teaspoon vanilla extract
  • Flaky sea salt, for sprinkling

Instructions

  1. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).
  2. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  4. Cover the dough and chill in the refrigerator for at least 30 minutes to prevent spreading.
  5. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  6. Scoop dough into balls (about 1½ tablespoons each) and place them on the prepared baking sheets. Bake for 9-11 minutes, until the edges are golden and the centers look slightly underbaked.
  7. Let the cookies cool on the baking sheets for 5 minutes before transferring them to cooling racks.
  8. Combine sugar and water in a heavy-bottomed saucepan over medium heat. Stir until the sugar dissolves, then stop stirring and let it simmer until it turns a deep amber color (about 5-7 minutes).
  9. Carefully stir in the heavy cream (it will bubble up) and continue stirring until smooth. Add the butter and vanilla extract, stirring until fully incorporated.
  10. Spoon a small amount of caramel onto each cooled cookie and sprinkle with flaky sea salt.
