  • 1 can (15 oz) chili with beans (or 2 cups homemade chili)
  • 1/2 cup tomato sauce
  • 1 tablespoon Dijon mustard (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • 8 beef or turkey hot dogs, sliced into 1-inch rounds
  • 2 cups shredded cheddar cheese (extra sharp preferred)
  • 1/2 cup shredded mozzarella cheese
  • 1 can (16 oz) refrigerated biscuit dough
  • 1 tablespoon melted butter
  • 1/2 teaspoon dried parsley or chives (optional)
  • Optional garnishes: sliced green onions, diced pickles, extra shredded cheese, jalapeño slices

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 13×9-inch baking dish with oil or nonstick spray.
  2. In a large bowl, combine chili with beans, tomato sauce, Dijon mustard, garlic powder, onion powder, and smoked paprika. Stir until smooth.
  3. Slice hot dogs into 1-inch rounds and stir into the chili mixture.
  4. Pour chili/hot dog mixture into the prepared baking dish and spread evenly.
  5. Sprinkle shredded cheddar and mozzarella cheese evenly over the chili layer.
  6. Separate biscuits from the can and arrange on top of the cheese layer, leaving space between each biscuit.
  7. Brush melted butter over the biscuits and sprinkle with dried parsley or chives if desired.
  8. Bake uncovered for 25-30 minutes, until biscuits are golden brown and cheese is bubbling. Rotate pan halfway through for even browning.
  9. Let casserole rest for 5-10 minutes before serving.
  10. Garnish with sliced green onions, diced pickles, extra cheese, or jalapeño slices as desired. Serve hot.

Notes

For gluten-free, use GF biscuit dough or cornbread mix. For vegetarian, use veggie dogs and meatless chili. Space biscuits apart for crisp tops. If biscuits brown too quickly, tent with foil. Leftovers store well and taste even better the next day. Use freshly shredded cheese for best melt.
