Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Wash and slice the yellow squash into ¼-inch rounds. Set aside.
  3. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced squash and chopped onion, then sauté until softened, about 8-10 minutes. Stir occasionally to prevent sticking.
  4. In a large mixing bowl, combine sour cream, mayonnaise, beaten eggs, 1 cup of shredded cheddar cheese, garlic powder, salt, and pepper. Mix until smooth.
  5. Add the sautéed squash and onion mixture to the bowl with the creamy base. Gently stir until everything is well-coated but not mushy.
