This cozy apple fritter bread delivers all the flavor of a classic apple fritter without deep frying. Tender apple chunks, a cinnamon swirl, and a sweet glaze make it perfect for fall mornings or any time you crave a comforting treat.

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter (1 stick), softened to room temperature
  • ⅔ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ cup sour cream (full-fat works best, Greek yogurt is a fine swap)
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg (freshly grated if you have it)
  • ⅓ cup milk (whole milk or 2% is ideal)
  • 3 tablespoons brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1 cup powdered sugar, sifted
  • 2 tablespoons milk (plus more if needed)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Line your loaf pan with parchment paper, leaving a couple inches overhang on the long sides. Lightly grease the parchment with butter or non-stick spray.
  2. Prep the apples. Peel, core, and dice your apples into ½-inch cubes. In a small bowl, toss them with 2 tablespoons of sugar and 1 teaspoon of cinnamon. Set aside.
  3. Make the cinnamon swirl. In another tiny bowl, stir together the brown sugar and 1 teaspoon of cinnamon for the swirl. Set that aside too.
  4. Cream the butter and sugar. In a large bowl, beat the softened butter and ⅔ cup granulated sugar together until light and fluffy—about 2 to 3 minutes with a hand mixer. Scrape the sides of the bowl with your spatula.
  5. Add the wet ingredients. Beat in the eggs one at a time, mixing well after each. Stir in the vanilla extract and the sour cream. The batter might look a little curdled at this point. That is totally fine.
  6. Mix the dry ingredients. In a separate medium bowl, whisk together the flour, baking powder, baking soda, salt, 1½ teaspoons cinnamon, and nutmeg.
  7. Combine wet and dry. Add half the dry mixture to the wet mixture and stir gently with a spatula or on low speed. Add half the milk and mix. Repeat with the remaining dry mixture and milk, mixing just until combined. A few streaks of flour are okay.
  8. Fold in the apples. Use your spatula to gently fold the cinnamon-sugar apple chunks into the batter. Try to distribute them evenly without crushing them.
  9. Layer the batter and swirl. Pour half the batter into the prepared loaf pan and spread it into an even layer. Sprinkle the cinnamon-brown sugar swirl mixture evenly over the batter. Spoon the remaining batter on top and gently spread it to cover the swirl.
  10. Bake. Place the pan in the oven and bake for 50 to 60 minutes. Start checking at the 50-minute mark. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly at the 40-minute mark, loosely tent it with aluminum foil.
  11. Cool. Let the bread cool in the pan on a wire rack for 15 minutes. Then use the parchment sling to lift it out and transfer it to the rack to cool completely.
  12. Make the glaze. While the bread cools, whisk together the powdered sugar, 2 tablespoons milk, vanilla, and ¼ teaspoon cinnamon. You want a thick but pourable consistency. If it is too thick, add a splash more milk. If it is too thin, add a little more powdered sugar.
  13. Glaze and serve. Once the bread is completely cool, drizzle the cinnamon glaze over the top. Let it set for about 10 minutes before slicing.

Room temperature ingredients matter. Do not overmix the batter. Use a serrated knife to slice. Let the bread cool completely before glazing. For a dairy-free version, use vegan butter, dairy-free yogurt, and oat milk. For a gluten-free version, use a 1:1 gluten-free flour blend. The bread can be frozen for up to 3 months.
