  • 3/4 cup buttermilk (180 ml) or milk with 1 teaspoon vinegar/lemon juice
  • Cinnamon sugar topping: 1/4 cup sugar mixed with 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine sliced peaches, bourbon, granulated sugar, brown sugar, lemon juice, cornstarch, cinnamon, vanilla extract, and a pinch of salt. Toss gently to coat. Let sit for 10 minutes.
  3. In a medium bowl, whisk together flour, baking powder, sugar, cinnamon, and salt.
  4. Cut in the cold cubed butter using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized bits.
  5. Pour in buttermilk and stir gently until just combined; do not overmix.
  6. Pour peach filling into the prepared baking dish and spread evenly.
  7. Drop spoonfuls of biscuit dough over the peaches, covering as much surface as possible but leaving some gaps.
  8. Sprinkle cinnamon sugar topping evenly over the biscuit dough.
  9. Bake for 35-40 minutes until biscuits are golden brown and peach filling is bubbly.
  10. Remove from oven and let cool for 10-15 minutes before serving.
