Cozy Chicken Parm Soup Recipe Easy Comfort in 30 Minutes

A warm, rich, and comforting soup inspired by the classic chicken parmesan, perfect for a quick weeknight dinner or a cozy weekend meal.

  • 2 cups cooked, shredded chicken breasts (or rotisserie chicken)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups low sodium chicken broth
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup small pasta shapes (ditalini or elbow macaroni)
  • Fresh basil leaves for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add 1 diced onion and sauté until translucent, about 3-4 minutes. Stir in 3 minced garlic cloves and cook for another minute, until fragrant.
  3. Pour in 4 cups of chicken broth, 1 can (28 oz) of crushed tomatoes, and 2 tablespoons of tomato paste. Stir to combine.
  4. Add 1 teaspoon of Italian seasoning, and season with salt and pepper to taste. Let the soup simmer for 10 minutes, stirring occasionally.
  5. Stir in 2 cups of cooked, shredded chicken and 1 cup of small pasta shapes. Cook for another 8-10 minutes until the pasta is tender.
  6. Turn off the heat and stir in 1/2 cup of grated Parmesan cheese. Taste and adjust seasoning if necessary.
  7. Serve hot, topped with shredded mozzarella cheese and fresh basil leaves.

Notes

Don’t overcook the pasta as it will continue to absorb liquid. Use rotisserie chicken for convenience. Fresh basil is key for garnish. High-quality Parmesan and mozzarella enhance flavor.
