These bars combine soft, buttery cinnamon roll dough with a sweet and tart apple filling, creating a quick and cozy autumn dessert perfect for any occasion.

Ingredients

Scale
  • 1 tube (about 12 oz / 340 g) cinnamon roll dough (Pillsbury recommended)
  • 3 medium apples, peeled and thinly sliced (Granny Smith or Fuji)
  • 1/4 cup (50 g) granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 2 tablespoons (28 g) unsalted butter, melted
  • 1 tablespoon (15 ml) lemon juice
  • 2 tablespoons (25 g) brown sugar
  • 1 cup (120 g) powdered sugar (for optional glaze)
  • 2 tablespoons (30 ml) milk or cream (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang for easy removal.
  2. Peel, core, and thinly slice 3 medium apples. Toss immediately with 1 tablespoon lemon juice to prevent browning.
  3. In a medium bowl, combine sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and melted butter. Stir gently until evenly coated.
  4. Unroll the cinnamon roll dough into the lined pan. Press gently to spread evenly across the bottom.
  5. Spoon the apple mixture evenly over the dough, pressing down slightly but not mashing.
  6. Bake for 35–40 minutes until dough is golden brown and apples are tender and bubbling. Tent with foil if top browns too quickly.
  7. While baking, whisk together powdered sugar, milk or cream, and vanilla extract to make glaze. Adjust thickness as needed.
  8. Remove bars from oven and cool in pan for at least 15 minutes. Use parchment overhang to lift bars out onto a cutting board.
  9. Drizzle glaze over bars while still slightly warm.
  10. Cut into 12 bars and serve warm or at room temperature.

Notes

Use parchment paper for easier removal and cleaner slices. Thinly slice apples to avoid soggy bars. Tent with foil if top browns too fast. Let bars cool before slicing for best texture. Optional glaze adds sweetness and a finishing touch. Add chopped nuts or dried cranberries for variation. Vegan and gluten-free adaptations possible with ingredient swaps.
