  • ½ cup (120 ml) vegetable oil
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with butter or non-stick spray, or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Whisk until smooth and well combined.
  4. Gradually add the dry ingredients to the wet ingredients, folding gently with a rubber spatula until just combined. Avoid overmixing to keep the bread tender.
  5. If using mix-ins, fold them into the batter at this stage.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. In a small bowl, mix the cinnamon and sugar for the topping. Sprinkle evenly over the batter.
