  • Zest of 1 large orange
  • ¾ cup (180 ml) heavy cream, plus extra for brushing tops
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • For the Clove Butter:
  • ½ cup (113 g) unsalted butter, softened
  • ¼ teaspoon ground cloves
  • 1 teaspoon orange zest
  • 1 tablespoon honey
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. Cut in the cold butter using a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized pieces.
  4. Gently fold in cranberries and orange zest, being careful not to break the cranberries.
  5. In a separate bowl, whisk together heavy cream, egg, and vanilla extract.
  6. Pour wet ingredients into dry mixture and gently fold until just combined; dough will be sticky but soft.
  7. Turn dough onto a lightly floured surface and pat into a 9-inch circle about 1-inch thick.
  8. Cut the circle into 8 wedges with a sharp knife or bench scraper.
  9. Transfer wedges to the prepared baking sheet, spacing about 2 inches apart.
  10. Brush tops lightly with extra heavy cream.
  11. Bake for 18-22 minutes until golden and a toothpick inserted comes out clean.
  12. While baking, mix softened butter with ground cloves, orange zest, honey, and salt until smooth to make clove butter.
  13. Let scones cool for 5 minutes on the baking sheet, then transfer to a wire rack.
  14. Serve warm with a dollop of clove butter.
