  • 2 pounds beef chuck roast, cut into bite-sized cubes
  • 4 carrots, peeled and sliced into rounds
  • 4 potatoes, diced into chunks (Yukon Golds or russets)
  • 3 celery stalks, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • Fresh thyme, optional for garnish
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat a large skillet over medium-high heat. Add a drizzle of olive oil.
  2. Season the beef cubes with salt and pepper, then brown them in batches.
  3. Transfer the browned beef to the crockpot.
  4. Add the carrots, potatoes, celery, onion, and garlic to the crockpot.
  5. In a small bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, and a pinch of salt and pepper.
  6. Pour the mixture over the beef and vegetables. Add the bay leaves.
  7. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  8. Once done, remove the bay leaves and give the stew a good stir. Taste and adjust seasonings if needed.
  9. Garnish with fresh thyme before serving.
