Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  2. Peel and slice peaches into 1/2-inch thick slices. In a large bowl, toss peaches with 3/4 cup granulated sugar, 1/4 cup brown sugar, lemon juice, cinnamon, nutmeg, 1 teaspoon vanilla extract, cornstarch, and a pinch of salt until evenly coated.
  3. Transfer peach mixture to the prepared baking dish, spreading evenly.
  4. In a separate bowl, whisk together flour, 1/4 cup granulated sugar, baking powder, and 1/4 teaspoon salt. Cut in cold cubed butter using a pastry cutter or two forks until mixture resembles coarse crumbs with pea-sized butter bits.
  5. Add milk and 1/2 teaspoon vanilla extract to the flour mixture. Stir gently until just combined; batter should be thick but spreadable.
  6. Drop spoonfuls of the topping unevenly over the peach filling, leaving some gaps.
  7. Bake on the middle rack for 35–40 minutes until topping is golden brown and peach filling is bubbly. Tent with foil if topping browns too quickly.
  8. Let cobbler cool on a rack for 10 minutes before serving.
