Cozy Slow Cooker Pork Chops and Gravy

  • 4 bone-in pork chops, about 1 inch thick (1.25 lbs / 575g)
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (30g)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 cups chicken broth (480ml), low sodium preferred
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 bay leaf
  • 1/4 cup sour cream (60ml), optional

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper. Pour the all-purpose flour into a shallow bowl and dredge each chop until lightly coated.
  2. Heat olive oil in a large skillet over medium-high heat. When shimmering, add the pork chops. Sear for about 3 minutes per side until golden brown but not cooked through. Transfer chops to a plate.
  3. In the same skillet, reduce heat to medium. Add sliced onions and cook until softened and lightly caramelized, about 5 minutes. Add minced garlic and cook for another 30 seconds until fragrant.
  4. Pour chicken broth into the skillet, stirring and scraping up browned bits stuck to the pan. Add Worcestershire sauce, Dijon mustard, dried thyme, and bay leaf. Stir to combine, then bring to a gentle simmer.
  5. Place the seared pork chops into the slow cooker. Pour the onion and broth mixture over them, making sure the chops are partially submerged.
  6. Cover and cook on low for 5 to 6 hours, or on high for 3 to 4 hours, until pork is tender and gravy is thickened.
  7. About 15 minutes before serving, remove the pork chops and keep warm. Stir sour cream into the gravy for a velvety finish. Taste and adjust salt and pepper as needed. Return chops to the slow cooker to warm through.
  8. Spoon the pork chops onto plates and ladle generous amounts of gravy on top. Garnish with fresh thyme or parsley if desired.

Notes

Searing the pork chops before slow cooking locks in juices and adds flavor. Avoid lifting the slow cooker lid during cooking to maintain heat. For thicker gravy, mix 1 tablespoon flour with 2 tablespoons cold water and stir into slow cooker 30 minutes before serving. Gluten-free substitutions include almond flour or gluten-free flour blend and gluten-free broth and Worcestershire sauce. Dairy-free option: omit sour cream or substitute with coconut milk yogurt.
