  • 34 lbs chuck roast
  • 2 tbsp olive oil
  • Salt and pepper
  • 4 large carrots, peeled and cut into chunks
  • 1 lb baby potatoes, halved
  • 1 large onion, quartered
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf

Instructions

  1. Peel and chop the carrots, halve the baby potatoes, quarter the onion, and mince the garlic. Set everything aside.
  2. Generously sprinkle salt and pepper over both sides of the chuck roast.
  3. Heat olive oil in a large skillet over medium-high heat. When the oil is hot, add the roast and sear for 3-4 minutes on each side until it’s browned.
  4. In a bowl, whisk together beef broth, red wine, tomato paste, Worcestershire sauce, thyme, rosemary, and the bay leaf. Set aside.
  5. Place the carrots, potatoes, onion, and garlic at the bottom of your slow cooker. Lay the seared roast on top of the vegetables.
  6. Pour the prepared broth mixture over the roast and vegetables.
  7. Cover the slow cooker and cook on low for 8-10 hours or on high for 4-5 hours. The meat should be fork-tender, and the vegetables should be soft.
  8. Carefully remove the roast and vegetables onto a serving platter. Strain the cooking liquid if desired, and serve as a delicious gravy.
