  • 1 cup old-fashioned rolled oats (90g)
  • ½ cup brown sugar (100g)
  • ½ cup unsalted butter, melted (113g)
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 2 ½ cups frozen mixed berries (blueberries, raspberries, strawberries) (375g)
  • ⅓ cup granulated sugar (65g)
  • 2 tbsp cornstarch
  • 1 tbsp fresh lemon juice
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×9-inch baking pan with butter or non-stick spray.
  2. In a large bowl, stir together the flour, rolled oats, brown sugar, cinnamon, and salt. Pour in the melted butter and gently toss with a wooden spoon until the mixture looks crumbly but holds together when pressed.
  3. Reserve about 1 cup of the crumble mixture for topping. Press the remaining crumble firmly into the bottom of the prepared pan to form the crust layer.
  4. In a medium bowl, combine the frozen berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently until all berries are coated.
  5. Spoon the berry mixture evenly over the pressed crust. Sprinkle the reserved oat crumble mixture over the top without pressing it down.
  6. Bake for 40–45 minutes until the topping is golden brown and berries are bubbling around the edges. If the topping browns too fast, tent loosely with foil after 30 minutes.
  7. Let the bars cool completely in the pan on a cooling rack for at least 1 hour to allow the filling to set.
  8. Slice into bars using a sharp knife dipped in hot water and wiped dry. Serve slightly warm or at room temperature, optionally with whipped cream or vanilla ice cream.
