  • 4 slices good-quality bread (sourdough, country white, or whole-grain; about 4 oz/120g)
  • 2 tablespoons unsalted butter, softened (or margarine)
  • 1 medium ripe avocado (about 5 oz/140g)
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon kosher salt
  • Pinch black pepper
  • Pinch red pepper flakes (optional)
  • 3 oz sharp cheddar cheese, sliced or shredded
  • 2 oz mozzarella or Monterey Jack cheese, shredded
  • 1 tablespoon chopped fresh herbs (cilantro, basil, or chives; optional)
  • 23 thin tomato slices per sandwich (optional)
  • Small handful spinach or arugula (optional)

Instructions

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl.
  2. Add lemon juice, kosher salt, and black pepper. Mash until smooth but still a little chunky. Stir in red pepper flakes and herbs if using. Taste and adjust seasoning.
  3. Lay out 4 bread slices. Butter one side of each slice generously.
  4. Flip two slices over (butter-side down) and spread the avocado mixture evenly over each.
  5. Layer cheddar cheese and mozzarella or Monterey Jack on top of the avocado. Add tomato slices, spinach, or herbs if desired.
  6. Top with remaining bread slices, butter-side up. Press gently to adhere.
  7. Heat a non-stick skillet over medium-low heat. Place sandwiches in the pan, butter-side down. Cook for 3-4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted. Cover pan with a lid for 1-2 minutes if needed to help cheese melt.
  8. Transfer sandwiches to a cutting board and let rest for 1-2 minutes. Slice in half and serve hot.

Notes

For best results, use ripe but not mushy avocados and don’t skip the lemon juice to keep the filling green and bright. Cook sandwiches over medium-low heat for a crisp crust and melty cheese. Cover the pan briefly if the cheese isn’t melting. Sandwiches are best served hot, but leftovers can be reheated in a skillet. For gluten-free or dairy-free, use appropriate bread and cheese substitutes.
