  • 1 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar

Instructions

  1. Remove crusts from bread slices and flatten each slice to about 1/4 inch thickness using a rolling pin.
  2. In a bowl, combine softened cream cheese, powdered sugar, and vanilla extract; whisk until smooth. Gently fold in fresh blueberries and set aside.
  3. Spoon about 2 tablespoons of the cream cheese and blueberry mixture near one edge of each flattened bread slice. Roll the bread tightly around the filling and pinch edges to seal.
  4. In a shallow bowl, whisk together eggs, milk, cinnamon, sugar, and salt until frothy.
  5. Dip each roll-up into the egg mixture, coating all sides evenly, and let excess drip off.
  6. Heat a non-stick skillet over medium heat and add butter or spray. Place roll-ups seam side down and cook for 2-3 minutes per side until golden brown and crispy.
  7. Remove from skillet and serve warm. Optionally dust with powdered sugar or drizzle with maple syrup.
