A quick and easy creamy buffalo chicken dip with a spicy kick and tangy blue cheese crumbles, perfect for parties and casual gatherings.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 300g, rotisserie chicken recommended)
  • 8 oz cream cheese, softened (225g)
  • ½ cup buffalo sauce (120 ml, Frank’s RedHot recommended)
  • ½ cup blue cheese crumbles (75g)
  • ½ cup sour cream (120 ml)
  • 1 cup shredded cheddar cheese (113g)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or chives for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the softened cream cheese with an electric mixer or whisk until smooth and creamy, about 3-4 minutes.
  3. Add sour cream, garlic powder, onion powder, salt, and pepper; mix until fully combined, about 2 minutes.
  4. Stir in the buffalo sauce and blend well, about 1 minute.
  5. Fold in shredded chicken and cheddar cheese gently until evenly distributed, about 2 minutes.
  6. Transfer the mixture into an 8×8-inch baking dish and spread evenly with a spatula, about 1 minute.
  7. Sprinkle half of the blue cheese crumbles evenly over the top, reserving the rest for garnish, about 1 minute.
  8. Bake uncovered for 20-25 minutes until bubbling and slightly golden on top.
  9. Optional: Broil for 2-3 minutes for an extra bubbly and browned top, watching carefully to avoid burning.
  10. Remove from oven and garnish with remaining blue cheese crumbles and chopped green onions or chives. Let cool for 5 minutes before serving.

Notes

Keep cream cheese at room temperature for 30 minutes before mixing to avoid lumps. Adjust buffalo sauce to taste for desired heat level. If dip looks dry on top after baking, stir gently before serving to soften. Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
