  • 34 cloves garlic, minced
  • 4 cups vegetable broth (low-sodium preferred)

  • 1 cup unsweetened almond milk (or regular milk/cream)
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika (optional)
  • Fresh parsley, chopped for garnish

Instructions

  1. Chop the cauliflower into small florets, dice the onion, and mince the garlic.
  2. Heat olive oil in a large pot over medium heat. Add diced onion and cook for about 5 minutes until softened and translucent. Add minced garlic and cook for another minute until fragrant.
  3. Add cauliflower florets to the pot and stir to coat in the onion and garlic mixture. Cook for 3-4 minutes.
  4. Pour in the vegetable broth, ensuring the cauliflower is mostly submerged. Bring the mixture to a boil, then reduce to a simmer. Cover and let cook for 20 minutes, or until the cauliflower is tender.
  5. Add roasted red peppers and smoked paprika to the pot. Stir well and allow the flavors to meld for another 5 minutes.
  6. Carefully blend the soup until smooth. Use an immersion blender directly in the pot or a countertop blender in batches, allowing the soup to cool slightly before blending.
  7. Return the soup to the pot, stir in almond milk, and season with salt and pepper to taste. Heat through for 2-3 minutes, then remove from heat.
  8. Serve hot, garnished with chopped parsley and a drizzle of olive oil. Pair with crusty bread or a side salad for a complete meal.
