  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup uncooked white rice (long-grain)
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream (or Greek yogurt for a lighter version)
  • 1 1/2 cups shredded cheddar cheese (or a mix of cheddar, Monterey Jack, or mozzarella)
  • 1 cup frozen peas (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Butter for greasing the baking dish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter.
  2. In a large mixing bowl, combine the uncooked rice, cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  3. Add the diced chicken and frozen peas (if using) to the bowl. Mix everything together so the chicken is coated in the creamy mixture.
  4. Pour the mixture into the prepared baking dish, spreading it out evenly.
  5. Sprinkle the shredded cheese over the top, covering the entire dish.
  6. Cover the dish tightly with aluminum foil and bake for 45 minutes.
  7. After 45 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  8. Let the dish rest for 5 minutes before serving.
