  • 2 tablespoons green onions, thinly sliced
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Zest of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 4 large butter croissants, split horizontally
  • Optional: ¼ cup halved red grapes or chopped toasted walnuts

Instructions

  1. If not already cooked, roast or poach about 2 chicken breasts (roughly 12 ounces or 340 grams). Let cool slightly, then shred or chop finely using two forks or a sharp knife (about 10 minutes).
  2. In a medium mixing bowl, combine ½ cup small-curd cottage cheese and ¼ cup mayonnaise. Stir gently to blend into a smooth, creamy mixture.
  3. Add finely chopped celery, green onions, chopped fresh dill, and lemon zest. Mix well but gently to keep celery crunchy.
  4. Fold in the shredded chicken until evenly coated. Season with salt and freshly ground black pepper to taste.
  5. If using, fold in halved grapes or toasted walnuts carefully.
  6. Slice the butter croissants horizontally, leaving a hinge to keep sandwiches intact.
  7. Spoon a generous amount of chicken salad onto the bottom halves of each croissant. Close gently and press lightly to secure filling without squishing the croissant layers.
  8. Serve immediately for best flaky texture. If preparing ahead, wrap tightly and refrigerate for up to 4 hours.
