  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt

Instructions

  1. Place 6 large eggs in a single layer in a medium saucepan. Add enough cold water to cover the eggs by about an inch. Bring to a rolling boil over medium-high heat, then immediately cover and remove the pot from heat. Let sit for 12 minutes.
  2. Drain the hot water and transfer the eggs to a bowl of ice water. Let chill for at least 5 minutes to stop cooking and make peeling easier.
  3. Gently tap each egg on the counter to crack the shell, then peel starting at the wider end where the air pocket is. Rinse under cold water to remove any small shell bits.
  4. Slice the eggs in half lengthwise. Carefully scoop out the yolks into a mixing bowl. Mash the yolks with a fork or potato masher until crumbly and smooth.
  5. Add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon white vinegar, 1/4 teaspoon salt, and a pinch of freshly ground black pepper to the mashed yolks. Stir well until creamy and smooth. Taste and adjust seasoning if needed.
  6. Spoon or pipe the yolk mixture back into the egg white halves. Sprinkle lightly with black pepper or smoked paprika for color.
  7. Refrigerate the deviled eggs for at least 15 minutes to let flavors meld and filling firm up slightly. Serve cold.

Notes

Use an ice water bath immediately after boiling to make peeling easier. For a lighter version, substitute mayonnaise with Greek yogurt. Adding smoked paprika on top adds a smoky flavor. Avoid overboiling eggs to prevent greenish yolks and sulfur smell. Prepare ahead by storing egg whites and filling separately.
