  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted
  • 1/2 teaspoon ground cinnamon (optional)
  • 4 (8 oz / 226g each) blocks full-fat cream cheese, softened
  • 1 cup (200g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 4 large eggs, room temperature
  • 2/3 cup (160ml) sour cream
  • 2/3 cup (160ml) heavy cream
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and cinnamon in a bowl. Pour in melted butter and stir until mixture resembles wet sand. Press evenly into bottom of 9-inch springform pan. Bake for 10 minutes, then cool.
  2. In a large bowl, beat softened cream cheese with an electric mixer on medium speed until creamy and smooth, about 3-4 minutes.
  3. Gradually add sugar, beating until just combined. Stir in vanilla extract.
  4. Add eggs one at a time, mixing on low speed after each addition until smooth and thick. Avoid overbeating.
  5. Gently fold in sour cream, heavy cream, and flour until just combined.
  6. Pour filling over cooled crust and smooth the top with a spatula.
  7. Bake at 350°F (175°C) for 10 minutes, then reduce temperature to 325°F (160°C) and bake for an additional 50-60 minutes. The center should jiggle slightly but not be liquid. Avoid opening oven door until last 15 minutes.
  8. Turn off oven and leave cheesecake inside with door slightly open for 1 hour. Then transfer to room temperature before refrigerating for at least 4 hours or overnight.

Notes

Bring cream cheese and eggs to room temperature before mixing to avoid lumps. Mix eggs gently to prevent cracks. Slow cooling in the oven helps avoid cracks. Use a hot, wet knife to slice for smooth edges. For gluten-free crust, substitute graham cracker crumbs with almond flour or gluten-free graham crackers. Dairy-free versions can use dairy-free cream cheese and coconut cream.
