  • 1 teaspoon (5 ml) maple syrup or honey
  • ½ teaspoon (2.5 ml) vanilla extract
  • ¼ teaspoon (0.5 g) cinnamon
  • Pinch of salt
  • Cookie crumbs or chopped nuts for topping (optional)

Instructions

  1. Combine the oats and milk in a jar or airtight container. Stir gently to combine.
  2. Add the cookie butter and mix; it may be thick or clumpy but will soften overnight.
  3. If using, add Greek yogurt for extra creaminess and stir.
  4. Add maple syrup or honey, vanilla extract, cinnamon, and a pinch of salt. Mix well.
  5. Stir until mostly smooth with no dry oats remaining; some cookie butter streaks are fine.
  6. Seal the container tightly and refrigerate for at least 6 hours or overnight.
  7. In the morning, stir the oats gently. Add a splash of milk if too thick.
  8. Top with cookie crumbs, chopped nuts, or a sprinkle of cinnamon if desired before serving.
